Strawberry-Nutella Crepes

Strawberry-Nutella Crepes


  • ½ cup all-purpose & ½ cup whole wheat flour (1 cup total.  You can also use 1 cup all-purpose flour)
  • ¼ teaspoon salt
  • 1 cup milk
  • 2 eggs
  • 2 tablespoons butter, melted
  • 1 teaspoon vanilla extract (or lemon extract)

In a medium-sized mixing bowl, combine the flour and the salt.  In another bowl, whisk together eggs, butter, milk, and vanilla.  Make sure the butter is slightly cooled so you don’t end up with scrambled eggs!

Slowly add the dry mixture to the wet mixture, whisking to combine.  Allow the batter to rest for 20-30 minutes to develop the gluten.  Or if you’re antsy, you can probably skip this part.

If you batter seems too thick, add water, 1 tablespoon at a time, until you reach the desired consistency.  The batter should be thin, but not watery.  You can also try using ½ C. milk & ½ C. water instead of a whole cup of milk when you are mixing your initial ingredients.

Spray a small skillet with non-stick cooking spray, and heat to medium-high heat.  Pour or scoop approximately ¼ C. of batter into the skillet, and tilt the pan in a circular motion so that the batter coats the surface evenly.  You can also use a bigger skillet for this if you don’t mind your crepes being a little uneven.  But if you have a small skillet, it makes perfect-sized crepes!

Cook each crepe about 2 minutes, until the bottom is slightly brown, then loosen with a spatula, flip, and cook the other side.  Keep warm in a 250 degree oven if you are serving them right away.

Cover the warm crepes in Nutella (who doesn’t love Nutella!) and strawberry slices, fold up, and top with powdered sugar or whip cream.  You can put pretty much anything in a crepe (omit the vanilla for savory crepes), but this was for Easter.  So we had them sweet and with wine!

If you are not serving them right away, cool them completely, and store them between layers of waxed paper in a plastic bag or container.

    Oh, baby! This looks freaking delicious – you just can’t go wrong with Nutella. And bravo on those perfect crepes – I couldn’t flip a crepe if my life depended on it.
